Gluten Free Pancakes

Pancakes have always been a favourite of mine, to this day I get incredibly excited when Pancake Day comes around!
You can imagine my disappointment when I was told I could no longer eat Gluten. For some it is a trend, for others its a lifestyle but for me, going Gluten Free is a necessity. So I became a woman on a mission, gluten free but relatively ''Clean'' pancakes. I didn't have to look far before I found banana pancakes.

Typically I can't stand banana's, they make me feel sick. However, these pancakes with a little peanut butter are delicious! Straightforward to make too...

You will need:
1 - medium sized banana (pick a nice ripe one, makes them sweeter!)
2 - medium sized eggs

Break up your banana in a bowl and mash it all together until it has a rice pudding type consistency.

In another bowl, crack your 2 eggs and whisk them together.

Then add them to the banana and stir together.

Add small amounts to a frying pan over a low-medium heat. They will take around 10 minutes on each side.

And voila, done. This should make around 6 pancakes depending on how large you make them but they cook better if made smaller. You can add anything you like to the recipe, chocolate chips, cinnamon, peanut butter, cocoa powder, it's adaptable to you!

I like to add whipped yogurt or fruit to mine. It's the kind of breakfast that is super healthy but makes you feel like you're eating a naughty treat.
